NoMI Wine Cellar

Now that crisp nights are becoming standard, our taste buds are craving rich and flavorful fare. Now’s the time to indulge on bratwurst and pot roast. To serve alongside in perfect harmony, Park Hyatt Chicago’s sommelier Aaron Sherman shares three of his fall favorites.

1. Navarro Vineyard’s Gewurztraminer from Mendocino is one of the best American Gewurztraminer produced.  It’s dry, it’s brilliant, it’s amazing.  Serve it alongside bratwurst to highlight the acidity and vibrant floral fruit notes. They go nicely together because the wine is bold enough to match the brat’s rich flavors.

2. Robert Foley’s Charbono has the perfect tannin for classic fall flavors. This bottle is a great way to break the Pinot Noir mold while still capturing the full and rich red tastes.

3) St. Urbans-Hof Riesling from Piesporter Goldtropfchen is the perfect gift for any occasion this fall. It’s striking, but retains a palate friendly taste for all.

Like what you see? Mr. Sherman leads Cellar Notes in NoMI’s wine cellar weekly. Tastings (of up to six wines) are Tuesday nights from 6 until 7:30 p.m.
